Curry Eggs By Sarah


Another super simple, super fast one here and my current breakfast favorite! If you're not a curry fan, simply leave it out. Easy as that!

  • Olive oil

  • Red curry paste (1 tsp)

  • Eggs - I cook them over easy but you do your thing.

  • Onion

  • Peppers - whatever you got

  • Spinach

  • Baked sweet potato - peeled and cut into wedges

Heat pan on med-high heat. Add a little olive oil and stir in the curry paste. Crack the eggs on one side of the pan and add the onions and peppers on the other side. Flip the eggs. Put a handful of spinach on the plate. Put the eggs, peppers and onions on top. 

Put a little more olive oil in the pan and add the sweet potato wedges - just cooking until it's heated through then add it to the plate.


Tips/Options:

Use any veggies you want - avocado, tomato, mushrooms would be good options.

Sriracha nut here so I added it on top.
